What's edible?
The heart and bases of the leaves are edible. The choke and upper parts of the leaves are not.

A sign of freshness
Closed, tight leaves are a sign of freshness and the heart will be more tender. Open leaves mean the artichoke is older and the heart might be dryer and stringy.
