Instructions
Prepare ingredients
Slice tomatoes thin and salt (pat dry before adding to sandwich). Chop lettuce as needed. Slice chicken thin. Gather remaining ingredients.
Toast the bread: for extra flavor, brush both sides with melted butter and toast in the oven on a baking tray (350℉ for 4 minutes per side, or broil for 1-2 minutes per side). Let cool for 1-2 minutes before making the sandwich.
Layer the sandwich
Toast: set 2 pieces of bread in front of you, per sandwich. You're going to make two open-faced stacks per sandwich.
Layer in order: 1 tablespoon mayo per piece of toast, lettuce, 1 tomato slice (patted dry), bacon, chicken (sliced thin), cheese.
Stack & serve: place one open-faced stack on top of the other. Then top with the remaining piece of toast. Secure halves (or quarters) with toothpicks, then cut and serve.
Notes
Bread: my favorite store-bought thin-sliced bread for club sandwiches is Pepperidge Farm thin-sliced (regular or sourdough).Bacon: I like Oscar Mayer naturally smoked bacon which is sliced thin and cooks up crispy. The layer order is important to keep the bread from getting soggy and to prevent the ingredients from slipping around too much from each bite.Nutrition includes all of the ingredients, including the melted butter. Without butter, each sandwich would be 50 calories less. Remove butter, 1 slice of bacon, ½ tablespoon mayo, and 1 slice of cheese to reduce calories by 200 per sandwich and 20g of fat.
